– Mantequilla
Es una grasa de origen animal introducida en la alimentación humana desde hace muchos años. Tiene algunas calorías menos que el aceite, ya que es grasa en un85%, el otro 15% es agua. La proporción de ácidos grasos que contiene es la siguiente: 50% saturados, 25% monoinsaturados y 3% de poliinsaturados; 30 ó 40 gramos de mantequilla proporcionan unos 100miligramos de colesterol, también contiene vitamina A en mayor proporción en verano, cuando las vacas se alimentan de pastos frescos.

Consumida cruda se digiere fácilmente y el aprovechamiento devitamina A es completo. Con la cocción se modifican los ácidos grasos que la componen y se producen nuevas sustancias químicas que dificultan su digestión.
La mantequilla casera no ofrece garantía desalubridad y por tanto no debe conservarse más de unos quince días

La mantequilla, elaborada a partir de leche pasteurizada, ofrece garantía de calidad y se puede conservar al amparo de la luz y enfrío durante más tiempo, según indique el fabricante.
Actualmente se están haciendo ensayos para alimentar a las vacas con piensos ricos en ácidos grasos poliinsaturados, para conseguir unamantequilla que se extienda mejor recién sacada del frigorífico.

– Manteca:
Es la grasa del cerdo purificada. Se usa en pastelería, en la fabricación de margarina y en la industria del pan.

– Panceta ytocino:
Son el tejido adiposo del cerdo. El tocino sólo proporciona grasa, mientras que la panceta puede ser fuente de proteínas, según lo veteada que esté.

– Pescados:
Podemos distinguir dosgrupos; pescados con un tanto por ciento de grasa igual o superior al 2% (bacalao, pescadilla etc.) y otro con contenido en grasa por encima del 20% (salmón, atún…).

– Carnes y aves:
Su contenido engrasa varía según el animal de que proceda y la zona del cuerpo del mismo. El pollo, pavo, conejo y las aves, en general, son las carnes con menor contenido en grasa, siempre que se retire la piel…
